The marrow bones are grilled and then mixed together with herbs to a pesto.
You need the following ingredients for one steak:
- 1 x Marrow Bones ➡ available in the online store
- Fresh herbs (e.g. rosemary, thyme, sage, olive herb)
- 3 tablespoons parmesan
- 2 tablespoons smoked almonds
- 1 tsp. andaliman pepper
- 1 tsp. chocolate pepper (long pepper)
- 1 tsp pink berries
- 1 tsp salt flakes
- Pinch of brown sugar
For the preparation you need a direct area around 220 degrees and an indirect area at 220 degrees. You can prepare the whole thing parallel to the steak.
First you can scrape the marrow out of the bone with a spoon, put it in a fireproof bowl and put it in the preheated grill to melt the marrow. At this time it is best to chop the almonds and crush the pepper together with salt and sugar in a mortar. Finely chop the herbs. Which herbs you take is up to you. There should be about 4-5 tablespoons of finely chopped herbs together.
Now take the melted marrow out of the grill and pour it through a sieve into another bowl (or directly into the mortar). The sieving is important, because in the marrow can still be small bone chips. Now mix the marrow with the pepper-salt-sugar mixture, the Parmesan, the almonds and the herbs. You get basically a kind of pesto. Put it aside for a moment.
Now grill the empty scraped bone from all sides. Now fill the bone with the "pesto" and grill it again for 7-10 minutes indirectly at about 220 degrees.
